Goal - To Be More Consistent!

So lots of stuff going on lately.  Between 3 weddings in six weeks, long weekends at work and trying to keep my working out and eating well on track its been crazy.  We are finally at the end of our busy wedding year; the last one of 2010 was Theresa and David's and boy was it a good time.  Friday, Erin headed in earlier to do some of the "girly" stuff with the other girls in the wedding party and I drove down a little bit later.  The night was a lot of fun, the priest absolved us of our sins (which is always good for me LOL), and the rehearsal dinner was fantastic too.  It was at an Irish restaurant/bar called Burkes, when we first got in there the waitress with a very heavy Irish accent asked us if we wanted something to drink.  She began to rattle off what we could have, wine, soda or beer...bud or coors light.  I have a feeling a little bit of her died inside only offering those two beers...with us being in an Irish bar and her being very Irish.  The food was very good!  Right up our healthy eating alley...salad, sauteed veggies, chicken Marsala and pork tenderloin with applesauce.  Also some fried mushrooms...those were very good as well. 

Saturday I decided to wake up a little early and head down to the gym to get some exercise.  I did 12.2 miles on the bike and got a good stretch too.  After a quick shower, I went down to the restaurant and had some breakfast.  After that with so much time to kill before I had to get dressed or anything, I decided to go for a walk to the shops across the street.  I really wanted to go to Dick's Sporting Goods but I'm an idiot and couldn't find the door LOL.  So instead I decided to walk down the street, not knowing that the street had no cross roads until I walked down like 3/4 of a mile.  I was able to find my way back to the hotel after walking around for about 2 miles.  After that it was time to get ready...I was able to wear one of the suits I had bought about 10 years ago and wore maybe once.  Still can't believe that it fit me and fit me well.  The ceremony and party that night was great!  Food was awesome and the dancing was fun too.  They even had a photo booth so you could take pictures as well.  All in all good times were had by all!

So now we are back to the normal grind for a bit.  Monday night for dinner we had Loaded Chicken Alfredo with vegetables.  This was pretty darn good, except for the fact that I didn't have grated Parmesan cheese, or regular white flower.  The sauce didn't come out as smooth as I would have liked but it was still good.  Broccoli, mushrooms and sun dried tomato's accompanied thinly sliced chicken to finish off the dish.  Tonight we had Panchero's...absolutely love that place.  Erin had the chicken burrito bowl, while I had the pork burrito bowl...always a good dinner from Panchero's. 

Today also was weigh in day as well...and I'm proud to say that I was able to lose 2 more pounds even through all the craziness.  So for I am down 52 pounds and am in the 250's for the first time in who knows when...10 years at least.  I will hopefully no be done with the 260's for good!!!  This was also the first night that Erin and I worked out together as well.  She's starting out slow...we just did some crunches and pushups tonight.  After that I decided to hit the elliptical for a short workout.  In 14 minutes I was able to do 1.6 miles.  Now in 30 minutes, by doing the math I technically could hit my "goal" of 3 miles...but I really don't know if I could keep up that pace for the last 16 minutes.  Who knows...we'll see.

Well i'm off for now...talk to you all later!  Goal for this week is to work out more consistently and hopefully lose 3 pounds by next weigh in.
