Another week bites the dust

Well another one down, and the start of the last weekend in June.  I definitely say it's been a good month.  Work has been going well, the diet is going well, I've lost at least 18 pounds just this month and all in all things are good.  Now I know some of you (Beth) were unhappy that I didn't write last night and I apologize.  Sometimes I just don't want to BS for 10 minutes if I don't have anything to say.  Yes, yes...when do I not have anything to say, but sometimes there is just nothing important to be said.

So I finally have some news on the baby front...Erin had a good report at the doctor today, we'll find out more specifics tomorrow...but even better news could be coming over the next 4 months.  Hopefully!

Another good thing happening soon is that Dragons hockey is back shortly too.  I've definitely missed playing lately.  After 5 games in less than 2 weeks, I kind of got a little spoiled.  Luckily a few of us are getting together tomorrow for a little shindig at Nick's house, so I'll be able to get my Dragons fix in.  Speaking of hockey...the first round of the NHL Entry Draft was tonight.  And suffice it to say, I'm very happy with who the Devils picked with the #4 pick.  A big defenseman, with good vision and what looks like the ability to be physical.  The kid is 6'3", 200 lbs...and for his size is a very good skater as well.  Do I think he could play next year with the Devils...Yes...do I think the Devils will give him a spot, probably not.  If he gets a full year under his belt in Albany, I think he'll be playing by the 2012-2013 season.  Also at one point during this scouting season he was ranked as the #1 player in the draft.  Some people didn't think he'd slip to the #4 pick and ironically it's very similar to what happened when the Devils drafted Scott Niedermayer in 1991. 

Finally we have the name of the relocated Winnipeg team and it is...the Jets!  Very happy that they kept the name from the previous team.  Now all that needs to be seen is what the jersey looks likes.  Again, I hope they keep the old colors and logo as well.  Too many teams change there stuff, here and there or come out with 3rd jerseys or alternate jerseys...it's really quite annoying.  Though I'm always excited when the Devils wear the Red & Green right around St. Patty's day!

So tonight was the first time all week I've really cooked a new meal...and on tonight s menu was Oven Fried Chicken with Almonds.  The almonds gave the breading and chicken a very nice nutty flavor.  The breading was just whole wheat bread crumbs, garlic, Parmesan cheese, parsley, thyme, salt and pepper.  Now if I was making chicken cutlets like normally, I would dip the chicken in an egg bath and then dredge them in the breading...instead this recipe had me coat the chicken with a little bit of olive oil, then dredge.  I guess that is where the "fried" part comes from.  Even though its really just baked.  I finished the meal off with a saute of fresh veggies (red & green pepper, portobella mushrooms and shallots) and just laid the chicken over them.  Very good stuff!  For desert I made my favorite pudding...butterscotch!  SOOOO GOOD...and only 70 calories!  Fantastic.

Tomorrow is another day with Erin gone...so I'll be on my own again.  Breakfast will be a lovely omelet again (I've missed those) then who knows for lunch/dinner since we will be at Nick's house.  BTW side note...love the Great Khali in Get Smart LOL too funny he is.  Light out time all...
