So I know I haven't been writing much lately, things have been a little crazy and even though we've still been following everything we've not been as diligent as before. I have also unfortunately gone the wrong way on the scale. I gained a pound this week and even though it may be because I've been working out more lately...I still feel disappointed. Like I let myself down over the last few weeks. Life is hectic sometimes and various reasons have made the last couple of weeks harder to stay on track. However I can't let this get me down. I need to jump right back on the horse and get it done! I'm not going to hit my goal for this week or this month, but I have to realize that it's OK sometimes. I'm not off the wagon, just hit a bump in the road and got side tracked. Soon enough we'll be back to basics and the ultimate goal is still in sight; it's just a little farther away now.
Mikey's wedding this weekend...much fun to be had! I will also try to behave as much as I can LOL.
Side note...tonight's dinner was Baked Pesto Chicken with a Red Wine and Herb Quinoa and a side of vegetables. The chicken was tossed and then baked in the pesto sauce and just before done topped with a mixture of garlic, plum tomato's and Mozzarella cheese. This dish was great, a definite must have in the recipe book. The quinoa was nice, very flavorful; it was cooked in red wine, water and chicken broth with some bay leaves and a cinnamon stick. Great dinner!
Tomorrow night is Sirloin Tip Marsala...should be another one. Night all and sorry but I feel like I let myself down still. Next week will be better.
