That's our motivational quote of the day by Robert Frost! Every day our life puts obstacles in our way, and the we have to adjust and get through them. Not be able to eat the way you want to, not having the time to work out, or even hitting that plateau that just seems impossible to break...you have to keep the faith and keep on working hard and what I've found is good to is to plan. Erin and I try to plan out our meals for the week. Now mostly that's just dinner but also making quick breakfasts helps too. Knowing what you're going to eat everyday in my opinion keeps you on track for your nutrition and can easily help with weight loss.
Enough with the motivational...last week we had some pretty darn 'Good Eats', from Tuna Noodle Casserole and Sauteed Steak with a Mushroom sauce to Ginger Sweet Chicken Broccoli Stir Fry and Beef Wellington we ate pretty darn good this week. I also yet again tried my hand at baking with whole wheat flour...it again did not turn out very well. For whatever reason I really think I need to find whole wheat pastry flour. Every time I use the regular flour things come out very dense...not light and fluffy. Oh well, there will always be next time...I will get this darn baking thing the South Beach way down at some point.
I also kept up my working out regime. Hit our 3-4 days a week goal and was able to up my distance and resistance on the elliptical to around an average of 3.25 miles in around 22 minutes. It's been great to feel so good lately and be able to continue to workout as well. Erin and I even tried out one of the Spark People 10 minute little workouts one night; this one was an arm/upper body workout. Only about 6-8 moves but was definitely tired after the short workout. Put a few of those together and you have a full body workout.
Saturday was Erin's birthday...so Friday night I decided to have a little surprise party for her at a restaurant in Fairfield called Barcelona. If you haven't been there, I would definitely recommend it! I was able to get a number of our friends together for the dinner and Erin was very surprised. Thanks so much for everyone who came, it was a great night! As far as the rest of the weekend, it was another back to back hockey game last night. The first game we lost 8-5 (half the team didn't show up) but in the second game we won 6-5 in OT. It was a great game, and Erin and her Dad were there to watch. All in all the weekend has been good so far and now I'm ready for a nice halfway lazy Sunday. Tuesday I'll be back with the weigh ins as well. Keep up the faith and have a good week everyone!
Have you tried any of the Atkins baking products? I find those work well!
ReplyDeleteDidn't even know they made Atkins baking products. I actually just bought the whole wheat pastry flour and I'm going to try and make the banana nut muffins again. We will see if the pastry flour works better than regular. I'm assuming it will, but I'll find out tonight and report.
