Two Days Back In And...

So after about a 3 week hiatus to everything (damn holidays), we're back on the wagon.  It was nice eating out and not worrying about making "healthy" dinners, but I feel so much better already.  Last night for dinner we had Baked Tilapia Chermoula.  Very simple dish the chermoula marinade is basically just garlic, red pepper flakes, cumin, salt, fresh chopped cilantro and then a drizzle of lemon juice and olive oil.  The marinade is super flavorful and is good with any type of seafood but can be used with other meats as well.  Chermoula is a traditional seasoning/marinade in Moroccan cooking.

Tuesday night was back into the swing of things for exercise.  Just started out simple with some situps and pushups (like usual), best part is a felt a good sore the next day.  Last night I somehow finished one of my goals way early.  I had used the elliptical numerous times, but had never quite got a consistent 10 minute mile.  I'd usually get to tired and would unfortunately slow down my pace.  I think the best I ever did in 30 minutes was 2.75 miles; so one of my goals (even though I was close to it anyway) was to do 3 miles in a half an hour.  Well last night I pushed myself and was able to complete 3.11 miles in that half hour!  Very excited about that.  Now I have to consistently do that for this month, if not do more.

Erin and I have also decided to do a sort of "goals checklist".  Since I still use the sparkpeople.com website, I get there little updates on exercise or goal setting or nutrition...whatever.  Yesterday's e-mail had a monthly calendar with 31 days to unbreakable resolutions.  Well looking at the first 2 days I had already done those...1) set goals for the year (i'm doing mine in 3 month sections) and 2) make sure those goals are specific and not generic.  I think mine were pretty specific.  Well yesterdays item was to post or write your goals somewhere that you would be reminded of them.  I know I posted on here, but I don't see them everyday, so I decided I would write them down and put them on the fridge in the kitchen.  Good idea right...well of course I took it to the next step.  I'm going to make a calendar with my daily goals, weekly goals and monthly goals.  And with Erin and I doing it we are going to start a new clothes fund based on those goals (something else I saw, this time on calariecount.com).  Basically if we complete all the goals for a day or week, we will put a portion of money away (only a few bucks) into our new wardrobe fund.  I thought it would be a good way to track and save some money for new clothes, since I tried on a pair of size 38 waist jeans last night and could button and zip them up...but they weren't "wearable" yet (too tight).  Hey it's a long way from where I was...before I probably couldn't attach the button with a bungee cord. 

They year is off to a good start and we hope to keep it going!  Dinner tonight is South Beach Chicken Pot Pie...Erin is very excited for that!  Later!
