Happy Birthday to ME!

Well I am yet another year older today...the big 33!  So on that note...lets talk about some famous/well known #33's in sports.  They are in no particular order...

Tony Dorsett, Jose Canseco, Patrick Roy, Larry Bird, Scottie Pippen, Honus Wagner, Patrick Ewing, Kareem Abdul-Jabbar, Joe Carter, Eddie Murray, Roger Craig, Jason Varitek, Michael Turner, Grant Hill, Zdeno Chara, Justin Morneau, Alonzo Mourning, Cliff Lee, Henrik Sedin, Larry Walker, Marty McSorley, Dustin Byfuglien and of course from the Flint Tropics....Jackie Moon!

Well that was fun!  Anyway...apparently something is happening for my birthday tonight, but I have no idea since Erin or anybody for that matter will not tell me.  All I know is that I had to clean up my room last night; I kinda felt like a little kid being scolded by their mother last night when Erin told me that.  No matter what I'm sure the night will be a blast.  Also I want to say a quick thanks to all the people who wished me a Happy Birthday on Facebook...so, Thank you so much for all your best wishes and kind thoughts!

Now onto last nights dinner.  We had Penne with Roasted Eggplant.  This was a pretty easy dish and the timing on everything was perfect too, which was even better.  Cube the eggplant and roast for 25 mins, turning once.  Cool some thinly sliced onions, garlic, diced tomato's, a little balsamic vinegar and salt/pepper to taste, then basically toss everything together in a large bowl with some ricotta cheese.  The serving size is about 2 cups and will definitely fill you up.  The dish is around 450 (or so) calories, but with whole wheat pasta and diced tomato's instead of tomato sauce, you subtract a lot of calories then if you made it normal.  All in all a very good dish.  Would highly recommend, however it was missing something...I'm just not sure what.
