Ruby Tuesday's eat your heart out!

Chipotle Shrimp Quesadilla
Tonight for dinner we decided to try one of the recipes from the Cook This Not That books.  If you don't know what those are...they are a shoot off of the Eat This Not That series that talks about making better eating decisions when you go out to eat...etc.  Well this book gives you recipes that are much better for you than their restaurant counterparts.  In this case we did Shrimp Quesadilla's; they are awesome at Ruby Tuesday's but around about 1300+ calories.  Reading through the book one really wonders how restaurants make seemingly good food bad.  The new lower fat, lower calorie version has about 320 calories!  A vast improvement over the Ruby's version.  I also made some homemade guacamole which according to Erin was pretty fantastic!  Had a very fresh flavor to it.  This was an awesome dinner, we added some black beans on the side, sour cream and salsa to add to the quesadilla and you are all set.  A definite keeper and a must have if you want a flavorful and spicy dish.

Last night was also an impromptu surprise birthday party for me, planned by my wonderful wife.  A few friends, some beer/liquor, pizza, wings and good laughs were definitely had by all.  Thanks to everyone who came over (Becca, Fogle, Sarah, Bubba, Kraemer and of course Shannon, Mike and my beautiful niece Norah), it was a blast and not expected.  I do with there wasn't a tornado warning for southern CT and Westchester county NY or the Laura's would have been here too.  Good times!

Today was a relaxing day for the most part; Erin and I looked at a few condo's with our realtor Gary and also did a little walking around in Target and Best Buy.  Tomorrow will be the last Dragons game for the season as unfortunately we will not be making the playoffs.  Hopefully we will get a win as long as the team shows up.  As I'm writing this, Erin and I are watching Dazed and Confused and the only thing I can think about is, I really should have grown up in that time period.  I would have loved to see Zeppelin live at that time along with countless others that were in their prime.  One of the best soundtracks also!  Well on that note...George Washington smoked weed LOL, and I'm off to bed in a bit...maybe, or possibly some Rock Band...who knows.  Lata all!
