Let's kick it up a notch!

So as promised, today we will have a photo of tonight's dinner!  But before we get to that, let's get some other stuff out of the way first...

Now most of you reading know, that I love playing Rock Band.  Right now I'm up to about 1,400 songs (I know...that's alot) and just yesterday the Rock Band platform hit a big milestone and got to 3,000 total songs!  Pretty cool.  So on that note, this weeks DLC (downloadable content - for those who don't know) was Yes.  Now most of you reading this probably know Yes for the song Owner of a Lonely Heart.  Well if you heard/know that song you wouldn't think they were huge in the progressive rock genre.  The other songs that came out this week were true prog rock songs; very different from quite possibly their most popular song.  3 of the other songs all over 8 minutes long and just kick-ass keyboard parts with some very melodic guitar parts.  Starship Trooper (not the movie) was probably my favorite of the 3 songs.  A great guitar hook in that one!   The other songs South End of the Sky, Heart of the Sunrise and I've Seen All Good People (the other very popular song they had).  If you enjoy music, I would recommend checking out some of there stuff.

South Beach Buffalo Chicken Salad
So now, onto dinner.  Tonight's dinner we went a little bit simpler than normal.  We had South Beach style Buffalo Chicken Salad.  Very quick to make and easily put together if you're in a rush.  Two - three chicken breasts cut into 1 inch pieces the long way, salad greens (we chose romaine lettuce), some celery and red bell pepper and of course the blue cheese dressing.  I made the dressing from scratch; a little light buttermilk, some olive oil, hot sauce and of course blue cheese.  All of that was pureed together until smooth.  The chicken was cooked in a broth of water, garlic and red pepper flakes.  Cook for about 5-8 minutes, set aside and let cool.  Here is what the finished dish looked like.

The chicken wasn't too spicy and had developed a nice flavor from the garlic and pepper.  The dressing was fantastic!  I added in triple the amount of hot sauce and it definitely gave the dressing a hot, yet cool taste.  I added some of the extra blue cheese crumbles to the top of the salad.   Definitely a keeper!


Tomorrow night we will be having a very robust pasta dish with a quick homemade sauce and some eggplant.  Night everyone!
