Ready for the long weekend!

Well people, it's almost time to party, time to celebrate the birth of our nations independence!  It is also apparently the time to love living in CT with all the new, improved and increased taxes in the state today as well!  Now I normally don't get political but some shit just annoys me.  Some of the new taxes are:  valet parking at airports, non-prescription drugs & medicine, clothing & footwear less than $50, cloth & fabric for non-commercial sewing and yoga instruction.  REALLY YOGA INSTRUCTION!!  What the hell is that crap!  Also increases in our Sales Tax, Income Tax, Rental Car Tax and short term stays at Hotels.  Actually as I write I'm getting taxed for having an opinion too!  Anyway...

Dinner last night was very good; even though I was pissed at the blender for not working properly because it was not put back together the correct way.  I wanted to punch a hole in the kitchen cabinets.  YEAH I know I get angry to quick LOL.  So last night we had BBQ Salmon (sauce of ginger, scallions, rice wine vinegar and bbq sauce) over a bed of Cole slaw and oyster mushrooms.  On the side I whipped up a very lovely Mustard sauce (made with mayo, Dijon mustard, mustard powder, rice wine vinegar, and scallions-S&P to taste).  Very good, Erin really enjoyed this one! 

Previous nights dinner was Chicken Stir-Fry with vegetables.  Quick and very easy.  Chicken was just cooked in a wok with some peanut oil, set aside and then the vegetables was a medley of green, red & orange peppers, diced onions and chopped spinach.  Finished it off with some soy and teriyaki sauce to add a little flavor and that's it!  This dish could be done with steak also.

Tonight is Fireworks Night in Shelton so we are making Sirloin chop steaks with sweet potato's and a Sam's Summer Ale.  And have dinner on the balcony while watching the fireworks, should be fun!

Bike ride possibly early tomorrow AM to beat all the damn walkers/runners to the bike trail so they're not in my way, and hockey on Sunday.  Everyone have a fantastic Friday!
